We had gone searching for a Chablis…yet ended up with a Petit Chablis. It seemed a bit strange at the time, but, on reflection, there was nothing untoward about this: no big deal, as Petit Chablis is, in effect, an extension of the Chablis appellation. And after our first ever visit to chez Laffay, what problem could there possibly be at getting Chablis quality at a Petit Chablis price?
Thierry has been working on the 7 hectares family vineyards (all located in Chablis) since 1978. He works with sustainable agriculture, while vinification is done in stainless steel tanks to give as much fruit expression as possible. The only problem is that the cellar is tiny, meaning that most of the wine has to be sold off in bulk…well, that’s not really too much of a problem when it enables you to keep back the very best results. Every wine is, therefore, the top ‘cuvée’.
